For this appetizer, which is called Sopes de flores de calabaza in Mexico, you can replace the squash blossoms with fresh nasturtium
flowers. If so, you will need about four dozen; use only the colored petals and leave them whole.

12 squash blossoms
1lb (450g) fresh poblano or other large green chilies (6 medium-large)
1 tbsp vegetable oil
1 large white onion, sliced 1⁄4in (5mm) thick
3 garlic cloves, minced
1⁄2 tsp dried oregano, preferably Mexican
8oz (225g) fresh tomatillos
3 tbsp water
about 3 tbsp grated Mexican queso anejo or other dry grating cheese, such as romano or Parmesan
For the masa boats
1 scant cup powdered masa harina
1⁄2 tsp salt
2⁄3 cup hot water
1⁄4 cup vegetable oil

1 Prepare the squash blossoms. Set aside.
2 Dry-roast and peel the chilies. Tear each one open and pull out the seed pod and stem; discard these. Rinse the cleaned chili flesh to remove stray seeds and bits of skin. Slice into strips 1⁄4in (5mm) wide. Set aside.
3 Heat the oil in a medium skillet over medium-high heat. Add the onion and cook, stirring regularly, until browned but still crunchy, about 5 minutes. Add the garlic and oregano, and cook for 1 minute longer, then stir in the chili strips. Remove from the heat.
4 Remove 1⁄2 cup of the chili mixture to use in making the salsa. Add the squash blossoms to what remains in the pan. Stir over
medium heat until the blossoms are wilted, about 1 minute. Season with salt to taste (usually about 1⁄2 tsp). Set the filling aside.
5 Heat the broiler. Remove the husks from the tomatillos, then roast them under the broiler). Let cool, then transfer to a blender. Add the reserved chili mixture and the water. Blend to a coarse purée. Taste and season with salt (usually about 1 tsp). Set the finished salsa aside.
6 Make the masa (dough) for the boats: Mix the masa harina with the salt and water. Cover and let stand for 10 minutes. Then work in more water, if necessary, to make the masa soft (like cookie dough) but not sticky. Divide the masa into eight pieces. Press each one into a tortilla press and griddle-bake briefly, then shape into a “sope”.
7 When you are ready to serve, pour the 1⁄4 cup oil into a large griddle or skillet and set over medium heat. When hot, lay the
sopes on the oiled surface in a single layer. Using a pastry brush, brush a little hot oil over the top of each one.
8 Divide the squash blossom filling among the sopes. Cook until they are crisp underneath, 1–11⁄2 minutes. Top each sope with a spoonful of salsa and a sprinkling of grated cheese, then serve hot.
